Apicius – 10 Years of Tuscan Flavors

In 2014, TuttoToscana marked an important milestone as Apicius International School of Hospitality celebrated its 10th consecutive dinner event hosted at the historic James Beard Foundation. Over the course of a decade, Apicius chefs, faculty members, and students had brought a wide spectrum of Tuscan culinary identities to New York City, presenting flavors and traditions ranging from the urban gastronomy of Florence to coastal villages, countryside territories, and the wilder inland regions of Tuscany.

Created through the ongoing collaboration between Apicius and the James Beard Foundation, TuttoToscana had evolved into far more than a study away program. It became a multidisciplinary experiential learning platform where culinary arts, hospitality management, wine studies, publishing, communication, photography, and event production converged through real international cultural events. Students worked directly alongside chefs, sommeliers, faculty members, publishers, and hospitality professionals, participating in every phase of development and execution — from menu design and kitchen production to branding, logistics, storytelling, publishing, guest relations, and event communication.

The 2014 edition celebrated this ten-year journey through a commemorative menu designed as both a retrospective and a contemporary reinterpretation of the flavors that had defined Apicius’ relationship with the James Beard Foundation over the years. The dinner opened with new culinary creations developed specifically for the 2014 program before progressing through updated interpretations of emblematic dishes previously presented during earlier editions of TuttoToscana.

Each dish reflected the evolution of the Apicius culinary philosophy: recounting Tuscany through cuisine understood as the intersection of places, histories, ingredients, and cultures translated into a singular gastronomic experience. Traditional Tuscan recipes and regional references were revisited with contemporary techniques, refined plating aesthetics, and new details that maintained fidelity to their origins while embracing innovation and creativity.

The evening’s production was carried out by the faculty-student team of TuttoToscana, reinforcing the initiative’s educational mission of immersing students within the realities of high-level international hospitality and cultural production. Through the preparation and execution of the James Beard Foundation dinner, students gained firsthand experience in event coordination, culinary operations, wine management, communication strategy, guest interaction, and interdisciplinary collaboration within one of the world’s most prestigious culinary institutions.

The 2014 edition also culminated in the presentation and promotion of the commemorative publication Ten Years of Tuscan Flavor, developed as a collaborative interdisciplinary project involving students from the publishing, photography, communication, and hospitality departments. Conceived as both a retrospective and a cultural archive, the book documented the evolution of Apicius’ decade-long relationship with the James Beard Foundation through recipes, photography, event narratives, chef collaborations, regional themes, and behind-the-scenes perspectives from the TuttoToscana experience.

Students contributed directly to editorial development, visual storytelling, interviews, photography production, graphic design, and promotional communication, transforming Ten Years of Tuscan Flavor into an extension of the event itself. Presented during the New York celebrations, the publication embodied the core philosophy of TuttoToscana: an interdisciplinary educational framework where gastronomy, publishing, storytelling, hospitality, and cultural communication coexist within a real-world international experience.
