In 2008, Ganzo was introduced as a new and innovative dining concept created by Apicius International School of Hospitality and The American University of Florence — a restaurant designed not only as a culinary destination, but as a living laboratory of creativity, culture, and experiential education.
Named after the Florentine slang adjective ganzo, meaning “cool,” clever, or exceptional, Ganzo embodied the contemporary spirit of Florence while remaining deeply connected to the city’s artistic and culinary identity. More than a restaurant, Ganzo became a multidisciplinary space where food, culture, art, design, and education could interact in a dynamic and constantly evolving environment.
Conceived as “The Flavors of Apicius & FUA,” the restaurant represented the academic philosophy of the institutions through real-world hospitality experience. Students worked directly alongside chefs, faculty members, and industry professionals, participating in every aspect of restaurant operations — from menu development and kitchen production to service, communication, event planning, and creative direction.
Ganzo quickly established itself as a cultural hub where contemporary cuisine met experimentation and collaboration. Seasonal menus, themed dinners, wine events, guest chefs, art exhibitions, and interdisciplinary projects transformed the restaurant into an extension of the classroom, allowing students to apply academic learning within an authentic professional setting.
Rooted in Florentine culture yet internationally oriented, Ganzo reflected the energy of a new generation of hospitality education: creative, hands-on, and deeply connected to the cultural fabric of Florence.
