TUTTOSCANA: THE MEDICI TABLE

In 2016, TuttoToscana returned to the James Beard Foundation for the 12th consecutive dinner event presented by Florence University of the Arts. Continuing the evolution of TuttoToscana as an international experiential learning platform, the 2016 edition explored one of the most influential cultural dynasties in Italian history through the theme “The Medici Table.”

Created through the ongoing collaboration between Florence University of the Arts and the James Beard Foundation, TuttoToscana had evolved far beyond a study away program into a multidisciplinary educational and cultural initiative where gastronomy, hospitality, publishing, communication, photography, wine studies, and storytelling converged through real-world international event production. Students worked directly alongside chefs, faculty members, sommeliers, designers, publishers, and hospitality professionals, participating in every aspect of the project from menu development and culinary execution to branding, event logistics, visual communication, storytelling, and guest experience.

The 2016 dinner paid tribute to the House of Medici, the powerful Florentine dynasty that shaped the political, artistic, scientific, and cultural identity of Florence and Europe between the 15th and 18th centuries. From their origins as bankers to their rule over Florence and the Grand Duchy of Tuscany, the Medici family became patrons of the Renaissance and supporters of some of history’s most important artistic and intellectual achievements, influencing architecture, science, politics, and cuisine throughout Tuscany and beyond.

The menu concept transformed the dinner into a culinary journey through Medicean Tuscany. Each dish represented a different Medici villa or palazzo located across the Tuscan territory, translating the landscapes, traditions, ingredients, and culinary identities connected to those residences into contemporary gastronomic expressions. Through food, guests were invited to travel symbolically between Florence and the broader Tuscan countryside, discovering how geography, aristocratic culture, and regional products shaped the Medici table.

Traditional Tuscan ingredients and historical culinary references were interpreted through modern techniques and contemporary plating aesthetics while remaining deeply connected to the cultural and territorial roots of the recipes. The dinner reflected TuttoToscana’s ongoing philosophy of presenting Tuscany not as a static historical image, but as a living dialogue between heritage and innovation.

As with previous editions, the 2016 event also represented the culmination of interdisciplinary collaboration between students from culinary arts, hospitality management, wine studies, publishing, photography, communication, and event management departments. Students participated directly in culinary preparation, wine service, event coordination, storytelling, branding, photography, digital communication, and guest relations, gaining firsthand experience inside one of the world’s most prestigious culinary institutions.

Through “The Medici Table,” TuttoToscana continued to strengthen its role as an international platform capable of translating Tuscan history, culture, and gastronomy into immersive educational experiences where cuisine becomes a medium for storytelling, cultural preservation, and contemporary interpretation.
