TuttoToscana: “Contemporary Chianti”

In 2012, TuttoToscana continued its evolution through the theme “Contemporary Chianti,” an edition dedicated to exploring the balance between Tuscan culinary tradition and contemporary innovation. Developed by Apicius International School of Hospitality in collaboration with the James Beard Foundation and other international venues in New York City, TuttoToscana once again transformed students into active participants in a real-world experiential learning environment centered on gastronomy, wine, hospitality, communication, and cultural storytelling.

More than a study away program, TuttoToscana functioned as a multidisciplinary platform where students collaborated directly with chefs, sommeliers, faculty members, photographers, publishers, and hospitality professionals to create immersive international cultural events inspired by Tuscany’s evolving identity. Through weeks of preparation in Florence followed by live production in the United States, students participated in every aspect of development, including menu design, wine pairing, event logistics, branding, communication strategies, hospitality operations, publishing, and guest experience.

The 2012 edition focused specifically on the Chianti region and the contemporary reinterpretation of Tuscan cuisine. Through demonstrations, tastings, and event dinners, “Contemporary Chianti” explored how modern Tuscan chefs balance historical culinary traditions with innovative cooking techniques, plating aesthetics, and evolving philosophies of sustainable food production.

Led by Chef Andrea Trapani alongside chefs Desire Boualy and Simone De Castro, the culinary presentations highlighted iconic Tuscan ingredients and preparations while introducing advanced contemporary methods inspired by the new generation of Italian gastronomy. The events emphasized accessibility and education, presenting Tuscan dishes in a way that international audiences could recreate at home while simultaneously understanding the deeper cultural and territorial significance behind the ingredients.

Central to the project was the identity of Chianti itself — the historic wine-producing territory between Florence and Siena recognized under DOCG protection and deeply connected to Tuscan culture. Guided by wine expert Camilla Carrega, the events explored the evolution of Chianti wines through organic and biodynamic viticulture practices, the predominance of Sangiovese grapes, and the increasing dialogue between traditional winemaking and contemporary international influences.

The menu celebrated emblematic Tuscan products and flavors including finocchiona, pecorino cheese, bollito alla fiorentina, wild boar, Chianti wine, and Blu del Chianti cheese. Many of these ingredients originated from humble rural traditions but were reinterpreted through contemporary culinary creativity and refined presentation techniques. Guests experienced how wine was used not only as a pairing element, but also as an active ingredient within recipes to enhance tenderness, depth, and regional character.

As with previous editions, the 2012 TuttoToscana program also represented the culmination of interdisciplinary student collaboration across culinary arts, wine studies, publishing, communication, hospitality, and visual media departments. Students worked on event documentation, storytelling, branding materials, photography, menu narratives, and promotional communication that accompanied the live experiences, reinforcing TuttoToscana’s philosophy of merging education with professional cultural production.

Through “Contemporary Chianti,” TuttoToscana continued to establish itself as an innovative international platform capable of translating Tuscany’s culinary identity into a contemporary language — one that respected the region’s rich traditions while embracing sustainability, experimentation, and the evolving future of Italian gastronomy.
